    • As I'm feeling left out of the gardening thread as I don't have a garden, I thought I'd better start a new equally middle-aged food thread.

      Last night's effort of a chilli chicken ramen which was pretty bloody good. I was going to save half of it for today, but I ate it all instead. I admittedly lost marks for presentation with the pyrex dish as I didn't have a big enough bowl.

      Ramen noodles
      Covered in chicken and beef broth with ginger, chilli, pak choi, edamame beans, carrot, red onion, peppers.
      Topped with a griddled and sliced chicken breast marinated in soy, ginger and garlic
      Finished with coriander and beansprouts.

      I'm on a bit of a health kick at the minute and avoiding carbs so lots of salad. Last night it was a bag of crunchy salad into which I chucked a diced ripe avocado, some bacon, some chilli flakes and some chicken breasts with cajun seasoning. I made a dressing with olive oil, balsamic vinegar, salt and pepper and some dijon mustard...very tasty

      My other top salad tip is a bag of baby leaf salad, flaked smoked mackerel and beetroot slices with a dressing made from sliced shallots, diced beetroot, olive oil and red wine vinegar then serve up with a little bit of horseradish sauce on the side...lovely!!!!

      bacalao con el chorizo - cod with chorizo

      the rogues gallery. cod, chorizo, new spuds, lemon, tomatoes, garlic, oil, white wine, paprika, saffron, parsley, lemon thyme and chilli flakes

      season the cod, and stick in a bag with lemon, white wine, olive oil, parsley and lemon thyme

      slice the spuds, season, add crushed garlic and drizzle with saffron/chilli/parika oil

      chop the tomatoes, chorizo, lemon, crushed garlic and mix together with the remaining oil

      heat the oven to gas mark 7 and chuck the lot in for 30 minutes

      the fish was fresh and moist, the meaty chorizo, the spuds nice and crispy and the tomatoes gave the whole thing a zingy kick, with the added bonus of the fragrant lemon thyme

    • I made Sweet Potato & Haloumi salad for my parents barbecue at the weekend...

      Boil thinly sliced sweet potato (with skins) (about 500g) for 2 mins. Drain, then fry in hot oil until slightly crispy.

      At same time, grill thinly sliced haloumi (about 250g), covered with olive oil, until starting to brown.

      For the dressing, mix lots of olive oil with lemon juice, lime juice, black onion seeds, loads of lemon thyme leaves and a large red chilli.

      Layer the sweet potato and haloumi alternately on a plate full of rocket, and cover in the dressing. Serve hot.

      Chris - I'm definitely trying that - it looks amazing!!

      I made Moroccan Lamb Tagine tonight - was a bit of a shove-together, but tasted amazing. Pretty easy to put together - slow cook some lamb, add fresh apricots, lots of paprika, lemon juice and ornage juice (although I used fruit squash!), add to some fresh veg and fried potato chunks and its a wishing well of taste dreams!

      that reminds me, my parents brought me back a proper tagine from Tunisia that needs firing, and a shit-load of harrisa too

      i fucking adore middle eastern/north african food. i can make a very tasty chicken schwarma. i learned this skill in the holy lands in a schwarma kitchen in old amman. happy days. when it comes to putting food in bread, i'm pretty much king.
